How to prepare carrot / Beetroot Halwa at Home

Carrot and Beetroot Halwa

You know carrot halwa is one of my special recipes. Milk, nuts, sugar and carrot flavour really gives a rich taste to the recipe. Even we can make this halwa without milk but today i'm going to explain you all with milk. Carrot halwa doesn't take much time to prepare but we need to spend some time in particular stage while preparing this recipe.

Let's begin.

Ingredients :

Grated Carrot       - 2 cups
Boiled Milk         - 1 cup
Condensed milk      - 1/2 cup
Sugar               - 1/2 cup
Ghee                - 5 tsp
Cashew nuts
Dried Grapes

Step : 1
Thoroughly wash and peel carrots and grate it well. Just 2 tightly packed cups of grated carrots are enough for us.

Step : 2
Place cooker in medium flame ( I usually prepare carrot halwa in the cooker ). Now add 4 tsp of ghee ( you can also use refined oil instead of ghee ) and grated carrots.

Step : 3
This part is very important to get a good taste to this recipe. Saute the grated carrot in ghee for almost 15 mins in slow to medium flame. Grated carrots may start to shrink in heat.

Step : 4
Once carrot shrunk well add condensed milk and keep on stirring. Later add normal boiled milk and allow it to bubble for few secs. Now stir it well and close the pressure cooker with lid.

Step : 5
Allow it to cook for 10 to 15 mins, make sure you must have added enough milk to cook or else it may become dry with insufficient milk.

Step : 6
Once you cooked grated carrot with milk, open the lid ( Switch off the stove to cool down pressure cooker. Because it is dangerous to open cooker which is in flame ).

Step : 7
Once you open the cooker stir the content well and switch on the stove. Now the consistency is very important, cooked carrot shouldn't have too much of milk with it. If the milk doesn't get reduced allow it to cook for few mins ( without covering the cooker ).

Step : 8
Now add sugar along with carrot & milk mixture. Saute it well. As like you sauteed carrot in ghee, take time and saute sugar with carrot and milk mixture.

Step : 9
Halwa is almost ready. You can fry cashew nuts and dried grapes in ghee and add to the mixture as a final step.

Wow!! There you go... Halwa is ready.

Beetroot Halwa :

Yummy carrot halwa has been prepared. Now you may have a question "How to prepare beetroot Halwa?". It's again simple and delicious dish. You can make beetroot halwa with the same procedure. The only difference is beetroot may be bit watery when compared to carrot. So it may take much time to reduce milk content (Before adding sugar ). Some people grind beetroot instead of grating it. But i usually prefers grating beetroots. Try these two simple and tasty recipes in your home!!
